Oatmeal Chocolate Chip Pecan – Our favorite!

Copy-Kids eat cookies too!  Oh yes, they do!  Fruits and veggies are eaten every day… but once in a while, especially on a cold day, we warm the house (and our tummies) by baking cookies from scratch.

Oatmeal Chocolate Chip Pecan Cookies

Preheat the oven to 325 degrees.

Combine butter & sugars, mix well until creamy.  Add the eggs & the vanilla.  Mix well.  In a separate bowl combine flour, salt & baking soda… stir into creamed mixture.  Blend well.  Add oats, nuts, chocolate chips & mix thoroughly. Drop spoonfuls onto an un-greased baking sheet.  (We used The Cool Bake.)  Bake 12 – 14 minutes.

* Not a fan of sugar?  Instead of 1.5 cups of sugar you can substitute with 3/4 cup of maple syrup.

** Chocolate Chips can be substituted with Carob Chips. (Or left out altogether.)

The baking pan shown is called The Cool Bake.  It was provided to us by the Love Cooking Company and I cannot speak highly enough of it!  It has a cooling rack built in and works remarkably well.  Bella was able to scoop the cookies off by herself — and not a single one broke — they slid right off.  Although this was provided to us free to try, I never ever promote product that I don’t personally use and love.  This pan is fantastic!
