It was so easy, that I must admit, I am a bit ashamed I’ve NEVER tried this before…  Sometimes we need a little encouragement to break out of our comfort zone.  Enter – DIY Nut Milks, Nut Butters & More by Melissa King.  I have been following Melissa for years now.  Her blog rocks!  Her Facebook page rocks!  She makes vegan living look so dang yummy.  But it wasn’t until I took the plunge and bought her book that I actually segued from admirer to convert.

I decided to start easy, with just a basic nut butter.  I also decided to do a taste and cost comparison with a fresh artisan cashew butter sold in the cold case at my local Co-Op.

I read the book from cover to cover one afternoon, sitting at the seaside.  It is gorgeous.  The writing is fantastic.  It describes everything in a non-intimidating way.  I knew exactly what I would need going into this… She offers wonderful cost-saving tips – like where to buy in bulk and why it does not matter if the nuts are whole (because they will be pulverized – duh – but it actually helped when I did my shopping).

I was well armed with everything from the history of nuts to their health content when I dumped my first bulk bin bag of cashews into the food processor.

Cashew Butter Store Bought vs Homemade

How did it compare to store bought?  The taste and consistency were virtually the same.  Both were creamy and decadent.

The cost savings was substantial.  The artisan brand cost $24.99 for an 8-ounce jar.  I was able to make two 8-ounce jars using a $12 bag of nuts purchased in bulk.  There was even a bit left over that I spread on toast and devoured as a reward for my efforts!

Now I have three gorgeous jars of cashew butter sitting in my fridge.  It will be weeks of yummy pleasure.  I will definitely be involving my daughter with the next batch I make – it was so easy and so satisfying.  I want to empower her from an early age to know the pleasure of making food from scratch.  Next up – nut milk!
